Banana Bran Muffins*

A warm breakfast delight that will help to start your day off on the right foot!

Ingredients:

3/4 cup all-purpose flour
1/2 cup oat bran
1/4 cup whole wheat flour
1-1/2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/8 teaspoon allspice
1 egg
1/2 cup orange juice
1/4 cup sugar
1/4 cup packed brown sugar
1/4 cup vegetable oil
1/2 cup mashed ripe bananas
1/4 cup and 2 tablespoons chopped walnuts

 Preparation: 25 minutes 

  1. In a large bowl, combine the first eight ingredients.
  2. In another bowl, beat the eggs, juice, sugars, and oil.
  3. Stir into dry ingredients just until moistened.
  4. Fold in bananas and nuts.
  5. Fill greased or paper-lined muffin cups two-thirds full.
  6. Bake at 400 degrees F for 15-18 minutes or until a toothpick comes out clean.
  7. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

Makes 12 servings: one muffin per serving
